Minestrone is the perfect vegan soup for cold-weather dinner with simmered vegetables, pasta, and spinach.

- 2 medium-sized onions
- 3 garlic cloves
- 2 Carrots
- One zucchini
- 1 tsp thyme
- 1 tsp rosemary
- one can chopped tomatoes
- 1 tbsp. tomato paste
- 0.7 l. Vegetable broth
- 0.2 kg. White beans or butterbeans cooked
- one handful spinach
- 0.2 kg. Pasta or macaroni
- a sprinkle black pepper
First, add chopped onions and garlic in a pot.
Now add chopped zucchini, carrots, rosemary, thyme, and chopped tomatoes
then cook for a several minutes before adding Vegetable broth, tomato paste, spinach, cooked white beans, and pasta.
Let it simmer for 10-12 minutes until the pasta is cooked.
Serve it warm with homemade bread, thyme, salt & pepper.
