Minestrone is the perfect vegan soup for cold-weather dinner with simmered vegetables, pasta, and spinach.

Ingredients
  

  • 2 medium-sized onions
  • 3 garlic cloves
  • 2 Carrots
  • One zucchini
  • 1 tsp thyme
  • 1 tsp rosemary
  • one can chopped tomatoes
  • 1 tbsp. tomato paste
  • 0.7 l. Vegetable broth
  • 0.2 kg. White beans or butterbeans cooked
  • one handful spinach
  • 0.2 kg. Pasta or macaroni
  • a sprinkle black pepper

Instructions
 

  • First, add chopped onions and garlic in a pot.
  • Now add chopped zucchini, carrots, rosemary, thyme, and chopped tomatoes
  • then cook for a several minutes before adding Vegetable broth, tomato paste, spinach, cooked white beans, and pasta.
  • Let it simmer for 10-12 minutes until the pasta is cooked.
  • Serve it warm with homemade bread, thyme, salt & pepper.
