Vegan Pasta is the new Sunday go-to recipe ready within 10 minutes. Enjoy this simple yet tasty pasta dish with mushrooms and soft tomatoes, green pesto, salt & pepper.

Ingredients
  

  • 1/3 kg. Pappardelle Pasta Vegan
  • One Handful of Tomatoes
  • One Handful of Mushrooms
  • 3 tbsp. Green Pesto of your choice
  • Vegan oil for frying
  • Salt & pepper

Instructions
 

  • First, cook the pasta according to package instructions (about 7-8 minutes).
  • Then chop the tomatoes and mushrooms into small slices after washing.
  • While you’re cooking the pasta, put some oil on a pan then fry the mushrooms and tomatoes.
  • Cook until golden but not crispy you still want it to be tender.
  • After draining the pasta, add basil pesto to it and mix around then Stir in the mushrooms and tomatoes.
  • Serve it hot after generously sprinkling salt & pepper and decorate with fresh basil.
