Vegan Cauliflower Curry

VEGAN CAULIFLOWER CURRY

NEW Vegan Cauliflower Curry. This 40-minute vegan dish is easy, creamy and heavenly taste with lentils, tomatoes, spinach and coconut milk.

You will need for this recipe:

  • 1 Onion, medium
  • 2 Garlic cloves
  • 1 can of Lentils
  • 2 tsp of Curry (Turmeric works as well)
  • 1 tsp of Cumin
  • 0.5 l. Vegetable broth
  • 1/2 Cauliflower head
  • 1 can Coconut Milk
  • Juice from 1/2 Lemon
  • One Handful of Spinach
  • One Handful of Tomatoes
  • Salt & Pepper

Method:

Start with chopping onion and garlic finely then add them on a pan with some of olive oil.
Now add the lentils into the pan after draining along with cumin and curry at medium heat.

Add small chopped bouquets of cauliflower along with the vegetable broth.
Now add lemon and coconut milk. Stir around everything we added and let the mixture simmer for 15 minutes until thick and creamy.

If it’s too thick you can add some plant milk. Finally, Add tomatoes and spinach and let simmer for another 15 minutes.

Serve with flatbreads, couscous, dressing, coriander, etc.
