Minestrone is the perfect vegan soup for cold-weather dinner with simmered vegetables, pasta, and spinach.
Ingredients:
* 2 medium-sized onions
* 3 garlic cloves
* 2 Carrots
* One zucchini
* 1 tsp of thyme
* 1 tsp of rosemary
* one can chopped tomatoes
* 1 tbsp. tomato paste
* 0.7 l. Vegetable broth
* 0.2 kg. White beans or butterbeans, cooked
* one handful of spinach
* 0.2 kg. Pasta or macaroni
* a sprinkle of black pepper
Let’s get into it:
First, add chopped onions and garlic in a pot. Now add chopped zucchini, carrots, rosemary, thyme, and chopped tomatoes then cook for a several minutes before adding Vegetable broth, tomato paste, spinach, cooked white beans, and pasta.
Let it simmer for 10-12 minutes until the pasta is cooked. Serve it warm with homemade bread, thyme, salt & pepper.
