Vegan Pea Patties, soft from the inside crispy on the outside. Super tasty dinner ready in under than 30 minutes!
Ingredients:
- 2 tbsp. Flaxseeds & 7 tbsp. Water
- 1/4kg. Chickpeas, cooked
- 1 small Onion
- 1 clove Garlic
- 150g. Peas
- 1 tsp Paprika
- Juice from half a Lemon
- 3 tbsp. Flour
- 1 tsp Baking Powder
- Handful of Parsley (optional)
- Salt & pepper
Method:
Before you start, mix flax seeds and water in a small bowl and set aside.
In a food processor add: Cooked chickpeas, peas, onions, garlic, lemon, paprika, parsley, flour, baking powder, – and a pinch of salt & pepper. Mix well until all ingredients blend together.
Now, add the flax seed mix to the batter and mix with a spoon, you should get a sticky mixture. Use the mixture to form rounded patties with your hands.
Fry with preheated pan with some olive oil. Cook until crispy and golden on both sides. Serve the patties with cold salad or in burgers. Enjoy!
