The ingredients:
* 1 tbsp. oil
* 2 tbsp. spring onions
* 1 garlic clove
* 1 cup eggplant, shredded
* 1 cup cabbage, shredded
* 1 cup carrot, shredded
* 1 small spring onion, finely chopped
* 1/2 tsp salt & pepper
Method:
start with chopping all the vegetables and cooking on a warm pan.
In a bowl of water, add 3-4 round flour wrappers so it can come out easily.
Now take one wrapper, place the vegetable filling, wrap and cook in deep frying pan with hot oil.
You can serve the vegetable rolls with ketchup, sweet chili sauce, or your own dipping sauce.
